Who we are.

Bramble Restaurant is born from two small town kids’ dream of creating a welcoming & unique dining experience in our home state of Vermont.

“Our goal is to provide a canvas for local farmers, butchers, and artisans to showcase their products, while offering a level of personal service and true hospitality that shines beyond expectations. We want to be a part of the neighborhood, we want to be a part of the community, we want to be where you come to unwind or celebrate.”

Bramble is a place to gather, a place friends come for a drink and a chat; where families come to eat delicious & real food; where everyone finds something they will love, where the kids get a handmade delicious woodfired pizza while mom and & dad split oysters, wood-roasted mushrooms, freshwater trout, and creamed spinach. Bramble is a place where you can have a nice bottle of wine and split a pizza and a salad. It’s a place to celebrate, to raise a glass, to dine out, to enjoy your favorite salad at lunchtime once a week, and to sit & lounge with friends for a lazy Sunday brunch. It’s a place to meet before a show. It’s a place to come in on your own and chat with the team. It’s a place that can accommodate that large group at the last minute. It’s a place to pop by and see who else is there. It’s a break from shopping. It’s always welcoming.

The food is fresh, honest, local, lively, and usually kissed by fire. There are lots of veggies, salads, local produce, and of course the best VT meats and cheese around. There’s always something fermenting, pickled, preserved, salted, aged or brined. And, there is wood burning in the awesome, custom made, big blue oven, all day, every day. Oh, and yes, there will be pizza!

The cocktails are innovative, approachable, and unique. There could be a punch of the day, or a fresh flip, maybe a sour, or even a swizzle. It may come in a bowl to share with friends, or in a stem to be sipped and reflected over. There are tinctures, tonics, and shrubs alongside margaritas, martinis, and manhattans. There are some things old, some things new, some things borrowed, some things blue. (well, maybe not blue!!)

The wine list is humble, evocative, thoughtful, and relevant. Like the European sensibility of the food, the wine program is a fluid, evolving part of Bramble’s unique identity. With wines that are fresh, bright, and clean, alongside wines that have pedigree, heritage, and ancestry. The quaffable and the celebrated. The unique and the daily driver. Something for every occasion, and for no occasion at all.
